Historically fruits & vegetables have been pickled to ensure a preserved supply for when they were out of season. However local Philadelphia resident and Crisp & Co founder Thomas Peter believes pickling is not just a means of extending shelf life but rather preserving exceptional produce at peak freshness and flavor!
That’s why Crisp & Co has the crimini mushrooms for these pickled mushrooms custom grown for them. Growing up near Kennett Square, PA - the “Mushroom Capital of the World” - means Peter knows good mushrooms, and he wanted to share them with his customers. Crimini mushrooms, known for their superior flavor, are seasoned with fresh thyme and bay leaf from a local herb farm in addition to California heirloom garlic and extra virgin olive oil. No wonder these savory pickled crimini mushrooms are award winning!
Previous to founding Crisp & Co Thomas Peter was an analyst at a large financial institution, then later got his masters of biomedical engineering and became a cancer researcher at Cornell University. He utilizes his training as a scientist and his interest in molecular gastronomy to perfect the texture and flavor of the produce he preserves - creating delicious, flavorful pickles our customers love. Peter partnered up with Linda Ziedrich of A Gardener's Table and author of The Joy of Pickling and The Joy of Jams, Jellies, and Other Sweet Preserves to develop some of the recipes used in Crisp & Co pickles.
